  • 1 cup fresh or frozen cranberries thawed if frozen
  • 4 oz Brie cheese cut into small cubes or thin slices
  • 1 tbsp sugar to sweeten cranberries
  • 1 tsp orange zest for flavor
  • 1 tbsp orange juice or balsamic vinegar adds tartness and depth
  • 1 egg beaten for brushing pastry edges

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Unfold the thawed puff pastry sheet on a lightly floured surface and gently roll it out to smooth the folds, then cut into about 2-inch squares using a sharp knife.
  3. Place the pastry squares on the prepared baking sheet, spacing them evenly apart.
  4. Place a small piece of Brie cheese in the center of each pastry square, ensuring it’s not too large to prevent spilling during baking.
  5. In a small bowl, toss the cranberries with sugar, orange zest, and orange juice or balsamic vinegar until well coated, then spoon a few cranberries over each piece of Brie.
  6. Gently fold the edges of the pastry slightly over the filling if desired, or leave them open for a more rustic look.
  7. Brush the edges of each pastry with the beaten egg to help them turn golden and shiny during baking.
  8. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed, golden brown, and bubbly, with the cheese melted and cranberries softened.
  9. Remove from the oven and let them cool slightly for a few minutes until the filling sets just enough to hold the bites together.
  10. Arrange the Cranberry Brie Bites on a serving platter, garnished with extra herbs or nuts if desired, and serve warm or at room temperature.
